This unique concept offers diners a one-of-a-kind dining experience, crafted with your preferences in mind, and no two menus are ever the same. The restaurant is accessible and caters to all diets, with a 5-course tasting experience at £30 per person.
From 111 to Trust
This concept builds upon Modou’s first restaurant; 111 by Modou in Kelvindale, where diners could choose the main ingredient of each course, and leave the rest up to Modou and his kitchen team. Here at Trust, even that level of control is taken away – the result? An evening of the unexpected, of guessing games and putting your palette to the test.

As you are seated in the luxurious, dimly lit restaurant, you are given not a menu, but a piece of paper where you can jot down what you thought each course was. For my experience, the first course was what I would call a modern twist on a tomato gazpacho, with notes of basil, bright, fresh tomato and rich olive oil. A beautifully light dish to kick off our experience, and one that got me excited for what was to come.
Course two was the highlight for me: a dish of mushroom gnocchi paired with asparagus, peas, picked mushrooms and a parmesan crisp. All the flavours of summer in a bowl. As the courses progressed, I became more and more invested in figuring out the ingredients of each dish, jotting down notes of flavours and aromas that hit me with each bite.

And to Drink?
To further enhance the experience, we were offered the option to add a mystery drinks pairing with our tasting menu. Choose from three flavour profiles: Bright & Zesty, Herbal & Fresh, or Smoky & Savoury. I opted for Bright & Zesty, which landed me with some beautifully light and sharp cocktails, and some dry, complex wines to accompany each dish.
My verdict? I think this is something everyone should try. I loved not having to pick from a menu. I loved figuring out what each dish was composed of. And I loved the surprise of assuming something based on sight, and experiencing something totally different on tasting.
